15:44 15 July, 2026An international team of scientists from 12 countries has launched the World Diet Initiative, a global research project aimed at documenting and studying traditional heritage diets before they disappear. The initiative, described in Nature Medicine, seeks to uncover how long-standing dietary traditions influence human health and help prevent chronic diseases.
For thousands of years, communities around the world have developed unique eating patterns based on locally available foods and traditional preparation methods. Examples include the animal-product-rich diets of the Maasai in East Africa, Ethiopia's predominantly plant-based cuisine featuring legumes, grains and fermented foods, India's extensive use of spices, and Pacific Island diets centered on fish, taro and coconut.
Researchers note that in many populations maintaining these traditional diets, chronic conditions such as diabetes and cardiovascular disease have historically been less common. However, these dietary patterns are rapidly being replaced by highly processed Western-style diets, threatening the loss of valuable nutritional knowledge.
The initiative consists of two major projects. The World Diet Atlas will create a freely accessible global database describing traditional diets, including the foods consumed and how they are sourced, prepared and eaten. Meanwhile, the World Diet Project will investigate the biological effects of these diets using standardized research methods, allowing scientists to compare results across different populations.
The program will operate as an international consortium, with local researchers leading studies in their own communities while maintaining ownership of the data and sharing findings through responsible scientific collaboration.
Supporting the initiative, researchers highlighted a recent study conducted in Tanzania's Kilimanjaro region. Men who replaced their traditional diet—rich in legumes, whole grains and fermented foods—with a processed Western-style diet developed higher levels of inflammation and other biological changes associated with chronic disease within just two weeks. In contrast, participants who switched from a Western diet back to a traditional diet, or consumed a fermented millet-and-banana beverage, experienced reductions in inflammatory markers.
The authors emphasize that the project is not intended to promote a return to historical eating habits or suggest that all heritage diets are inherently healthier. Instead, they argue that each traditional diet offers unique biological and cultural insights into how nutrition influences the immune system, metabolism, the gut microbiome and overall health.
According to co-lead researcher Quirijn de Mast of Radboud University Medical Center, the initiative aims to preserve this knowledge and translate it into evidence-based strategies for preventing chronic diseases and improving understanding of how nutrition affects immune function and vaccine responses.
