For nearly half a century, eggs were viewed with suspicion by many health experts because their yolks contain cholesterol, which was once considered a direct contributor to heart disease. However, a new study has placed eggs on a much more encouraging list: foods that may help protect the aging brain. The findings were published in The Journal of Nutrition.
U.S. dietary guidelines once recommended limiting cholesterol intake to 300 milligrams per day. Since a single large egg yolk contains about 185 milligrams of cholesterol, eggs became one of the foods people were encouraged to restrict.
Over time, researchers began to distinguish between dietary cholesterol and blood cholesterol, a distinction that had long been overlooked, Planet Today reports. Studies showed that dietary cholesterol has only a modest effect on blood cholesterol levels, while saturated and trans fats have a much greater impact.
This shift became official policy in 2015, when U.S. dietary guidelines removed the daily cholesterol limit and recognized that eggs can be part of a healthy diet. The American Heart Association now recommends that most adults can safely eat one egg per day as part of a heart-healthy eating pattern.
Researchers from Loma Linda University set out to investigate whether a single food could influence the risk of developing Alzheimer's disease. They analyzed data from the Adventist Health Study-2, one of the longest-running nutrition studies in the United States.
The research followed 39,498 adults aged 65 years and older for an average of 15.3 years. During that period, 2,858 participants were newly diagnosed with Alzheimer's disease, according to Medicare records.
The results revealed a clear association. Participants who ate one egg per day at least five days a week had a 27% lower risk of developing Alzheimer's disease than those who rarely consumed eggs. Even modest egg consumption appeared beneficial: eating eggs one to three times per month was associated with a 17% lower risk, while consuming two to four servings per week was linked to a 20% reduction in risk.
These associations remained significant after researchers adjusted for age, lifestyle, diet quality, diabetes, high blood pressure, and other potential confounding factors. People who completely avoided eggs had a 22% higher risk than those who ate roughly one egg every other day.
Researchers believe one possible explanation is choline, a nutrient found in particularly high concentrations in egg yolks.
The body uses choline to produce acetylcholine, a neurotransmitter essential for memory and communication between brain cells. People with Alzheimer's disease typically have reduced acetylcholine levels, and many current Alzheimer's medications are designed to increase its activity.
Choline was officially recognized as an essential nutrient only in 1998, when the Institute of Medicine established recommended intake levels. Even today, most Americans fail to consume the recommended amount.
One large egg provides approximately one-third of an adult's daily choline requirement. Previous studies have linked choline to fetal brain development, highlighting its importance throughout life.
Choline is not the only beneficial compound in egg yolks. They also contain lutein and zeaxanthin, two plant pigments that accumulate in brain tissue. Earlier research has associated higher levels of these compounds with better memory and faster information processing in older adults.
Egg yolks are also a source of omega-3 fatty acids, which help build the membranes that brain cells use to transmit and receive signals—the same reason oily fish is widely regarded as beneficial for brain health.
According to the researchers, around 30% of the fat in an egg contributes to these signaling membranes. No study has yet identified a single nutrient responsible for the observed protective effect, suggesting that egg yolks may work through a combination of beneficial compounds.
The researchers emphasized several important limitations of their study. The participants were Seventh-day Adventists, a population that generally smokes less, exercises more, and follows healthier diets than the average American.
As a result, the findings may not be fully generalizable to the broader population. In addition, the study was observational, meaning it identified an association rather than proving that eggs directly reduce the risk of Alzheimer's disease.
"We want people to pay attention to their overall health," said Jisu Oh, the study's lead author.
Alzheimer's disease has proven resistant to most preventive strategies, and nutrition research has identified relatively few dietary habits that meaningfully reduce dementia risk.
This study adds eggs to the short list of lifestyle factors—including regular physical activity, adequate sleep, and blood pressure control—that may help support brain health. The findings also reflect a broader shift in scientific understanding of how everyday dietary choices can influence cognitive aging.
For a disease with so few proven preventive measures, even a modest, affordable dietary option could have meaningful public health implications.
