Meat alternatives during Lent

Dietitian Alexander Andreev (Russia) told what foods can replace meat during Lent in order not to deprive the body of protein and essential vitamins and minerals.

As "Izvestia" reports, during Lent it is not allowed to eat meat and its by-products, animal fat, dairy products and eggs. Andreev advised making up for the lack of nutrients with vegetables, fruits and other lean food.

According to the expert, spinach, broccoli, beans and nuts can be a source of calcium during the fast, spinach, green salad and whole-grain bread - of iron, and nuts, mushrooms, oatmeal, garlic, asparagus, cauliflower, black currant, potatoes and carrots - of zinc. Vitamin C, according to Andreev, is found in citrus fruits, broccoli, sweet peppers, cabbage and cauliflower, and tomatoes, while vitamin B is found in potatoes and cereals.

You can also diversify your fasting menu with bread grains such as oats, barley, rye, corn, and buckwheat, as well as vegetable and legume soups. Vegetables should be eaten either fresh or as a salad with olive oil dressing. In addition, according to the specialist, seaweed, nuts, and fruits should be added to the diet.
