Scientists doubt usefulness of chicken

June 6, 2019  11:00

Scientists compared chicken meat with red meat, and made an unexpected discovery: both types of meat equally increase cholesterol levels, American Journal of Clinical Nutrition reported.

Specialists from the University of California at San Francisco conducted a study involving 113 people aged 21 to 65 years. All subjects were divided into groups based on the level of consumption of saturated fat. Volunteers had four weeks to sit on three different diets: with the consumption of red meat; chicken meat; vegetables and legumes.

In the interval between diets, participants in the experiment donated blood for analysis. It turned out that both red meat and chicken meat equally increased the level of bad cholesterol, and this pattern was observed regardless of the amount of saturated fat in the diet. This, for its part, increases the risk of developing heart disease.
