Cancer Research UK: Burnt toast does not considerably increase cancer risk

Burnt bread contains a harmful compound that can damage DNA and increase the risk of cancer. However, its concentration is so low that it does not pose a serious health risk, said Ed Yong, a representative of the cancer research charity Cancer Research UK.

Scientists have confirmed that frying starchy foods—such as potatoes and bread—does indeed produce acrylamide, a potential carcinogen that is also found in cigarette smoke. However, the research data show that the real risks for humans are greatly exaggerated.

According to Yong, early animal studies used extremely high doses of acrylamide, which are not comparable to the amount that people consume in food. Therefore, the results of such studies cannot be applied to humans.

Experts emphasized that the main risk factors for the development of oncological diseases are the constant consumption of alcohol, red meat and processed meat, as well as foods high in fat, sugar, and salt.
