What dangerous processes in body are triggered by consumption of potato chips?

Frying potatoes in oil produces carcinogens that destroy the cardiovascular system and affect mental abilities, said nutritionist Elena Solomatina on the air of the radio station Govorit Moskva.

"Chips are not just empty calories like white flour, there are also end products of glycation, when proteins stick together. Early aging, which manifests as wrinkles on the skin, early senility of the body - this is the result of frying chips in oil. Plus the oil is not always changed after the first batch. Then carcinogens are formed, a large number of free radicals, which destroy the cardiovascular system, lead to dementia," - said the expert. 

Solomatina advised not to eat potato chips more than once a month. If you want, they can be cooked at home in refined vegetable oil or olive oil, and the oil must be changed after each batch. However, even with this method they should not be eaten often. It is better to replace potato chips with banana or carrot slices, the nutritionist added.
