Vegetables That Reduce the Effects of Sugar on the Body Named

Scientists from the University of California, Irvine, have identified vegetables that can reduce the harmful effects of sugar on the body thanks to a natural fiber called inulin, reports The New York Post.

They found that onions, garlic, and artichokes can alter the bacteria living in the gut, preventing fructose from reaching the liver. “We found that consuming a type of dietary fiber called inulin changes gut bacteria in a way that prevents harmful fructose from being absorbed,” said lead researcher Cholsun Jang.

Jang and his team discovered that bacteria in the small intestine can metabolize fructose before it reaches the liver. However, without enough fiber, fructose overloads the liver and promotes fat accumulation. With the help of inulin, microbes start breaking down sugar at an earlier stage.“By identifying specific gut bacteria and metabolic pathways, our findings could  help develop personalized nutrition strategies,” Jang emphasized.
